Polyphenols, a diverse class of secondary metabolites—including flavonoids, phenolic acids, anthocyanins, and tannins—play a pivotal role in the antioxidant activity and medicinal value of plants. These bioactive compounds accumulate in various plant organs, such as fruits, leaves, seeds, and roots, and their concentrations are profoundly influenced by environmental conditions, phenological stages, and post-harvest handling. Among post-harvest processes, drying stands out as a critical method for preserving medicinal plants, significantly affecting the retention or degradation of phenolic compounds. The selection of an appropriate drying technique is not only essential for inhibiting microbial growth but also for maintaining the physical, sensory, and bioactive characteristics of the plant material. This review aims to evaluate and highlight the most effective drying strategies for medicinal plants rich in polyphenolic compounds with antioxidant activity. Evidence from multiple studies indicates that natural drying methods, including shade and sun drying, generally result in greater losses of phenolic compounds compared to artificial drying techniques. Conversely, artificial methods such as freeze-drying and microwave drying achieve the highest retention of phenolic compounds and antioxidant capacity. Reported discrepancies among studies are primarily attributed to differences in plant species, drying temperature, duration, and the analytical methods employed for quantifying phenolic content.
