In order to investigate the effects of stress modulators on the properties of peppermint (Mentha piperita), an experiment was conducted in a factorial design based on a completely randomized design under ultraviolet (UV) stress conditions during the academic year 2023-2024 at Urmia University with three replications. The factors under study included green zinc nanoparticles at three levels (0, 50, and 100 mg per liter) and UV stress at three levels (0, 30, and 45 minutes). Regarding the morphological traits of peppermint, the results showed that the highest dry weight of aerial parts and root dry weight were obtained in the combined treatment of 100 mg per liter green zinc nanoparticles under 30 minutes of UV stress. Regarding the physiological traits of peppermint, the results indicated that the highest levels of chlorophyll a and chlorophyll b were found in the treatment of 100 mg per liter green zinc nanoparticles under no UV stress, while the highest levels of soluble sugars, carotenoids, proline, and essential oil percentage were achieved in the combined treatment of 100 mg per liter green zinc nanoparticles under 45 minutes of UV stress. Concerning the measured antioxidant traits, the highest levels of phenol, flavonoids, and enzymes (peroxidase and catalase) were observed under 45 minutes of UV stress, and the lowest levels were found in the control. Based on these results, the foliar application of green zinc nanoparticles, particularly at a concentration of 100 mg per liter, has been able to somewhat reduce the harmful effects of UV stress.
